We are looking for a competent and enthusiastic second Cook, who is an excellent home cook to assist our Head Chef in serving outstanding meals to our residents at Alfriston Court. Currently our Head Chef works Monday - Thursday and the role being offered is that of second Cook who would work Thursday to Sunday: 8am- 5pm: 36 hours a week total, but there is some flexibility for the right candidate. The location is Alfriston Court Care Home, in Alfriston. We are a small, beautiful, welcoming nursing and residential care home overlooking the village of Alfriston and the South Downs National Park. You will ideally have a minimum of 4 years experience and be confident in working alone whilst managing your supportive Kitchen Assistant. Although numbers vary, typically the role involves a number of cooked breakfasts each morning, lunch for 30 residents (including some relatives) at 12.30pm and 10-15 staff lunches each day. Supper is a simple but varied menu, prepared before 5pm and then served to residents by the Health Care Assistants. Provide special food and beverages when requested for parties and birthdays or other celebrations. 6. Ensure eligible staff have lunch provided. 7. Ensure that the Home maintains an Environmental Health Regulations Level 5 accreditation by making sure that that the kitchen is run and food is handled in full accordance with all relevant regulations and guidelines e.g.making sure that food is used or discarded within date and is correctly stored, labelled and wrapped according to food safety regulations. Record daily temperatures of the refrigerators and freezers; record temperatures of cooked meat and fish and keep food samples; record temperatures of food on delivery; maintain daily record of all food consumed by residents. Check food stores to ensure all food remains fresh and fit-for-purpose. 8. Maintain an efficient, effective and regular kitchen-cleaning rota including periodic deep cleaning - delegating tasks where necessary to maintain high standards of hygiene and cleanliness and meeting all Environmental Health Regulations. Keep appropriate records. Ensure there are appropriate tools for the job. 9. Ensure the dining experience is of a high-standard working with the kitchen team and other home teams to ensure the dining area, table and tray settings, food presentation and food descriptions are delivered to a high level of presentation. 10. Liaise with the Head Chef and Registered Manager on a weekly basis to ensure a smooth transition between Chefs, to discuss the seasonal menu changes and the general management of the Kitchen Staff Team.
