Collinsons Restaurant is a modern and elegant dining spot located in Broughty Ferry, Dundee. Opened in 2012 by Chef Stephen Collinson, the restaurant focuses on high-quality British and European cuisine made with seasonal, locally sourced ingredients. Known for its stylish ambience and attentive service, Collinsons has earned praise from the Michelin Guide and is a favourite among locals and visitors for special occasions or fine dining experiences. Overall Purpose of the Job The Floor Manager will support the smooth day-to-day running of front-of-house operations, lead the floor and service team during service, maintain high standards of customer care and waiting service, and help control beverage, bar and service stock. The role works closely with the Restaurant Manager and kitchen team to ensure consistent, efficient and professional service delivery. Reports to: Director Key Responsibilities • Oversee front-of-house activities during assigned shifts, ensuring customers receive a smooth and efficient service., • Lead and support waiting and service staff on the restaurant floor, including pre-service briefings and allocation of day-to-day duties., • Coordinate staff positioning, breaks and shift coverage during service, reporting staffing issues to the Restaurant Manager where necessary., • Monitor the standard and presentation of wine, beverage and bar service during each shift., • Check beverage, bar and service stock availability before and during service and report low-stock requirements to management., • Assist with routine stock counts and maintain accurate records of breakages, wastage and unusual stock usage., • Monitor food and beverage service presentation and ensure waiting-service procedures are consistently followed by the front-of-house team., • Welcome customers, oversee table service and resolve routine customer concerns, escalating significant complaints or service issues to the Restaurant Manager., • Carry out regular checks of restaurant, bar and service areas to ensure cleanliness, organisation and compliance with established hygiene, health and safety procedures., • Assist with receiving and organising beverage and front-of-house supplies and communicate replenishment requirements to the Restaurant Manager., • Liaise with the kitchen team during service regarding table timing, dietary requirements, special requests and service priorities., • Coordinate table allocation, guest flow and service timing during busy periods to support efficient restaurant operations., • Complete opening and closing checks for the front-of-house and bar areas in accordance with restaurant procedures., • Provide the Restaurant Manager with shift updates on customer feedback, staffing matters, stock issues, wastage and any operational concerns arising during service. What We Need • Previous supervisory or management experience in a restaurant, hospitality or front-of-house environment., • Strong leadership and communication skills with the ability to supervise and motivate service staff during busy periods., • Good knowledge of restaurant service standards, customer care and complaint handling., • Practical knowledge of wine, beverages and bar service, including stock handling and wastage control., • Good organisational skills, including the ability to support rotas, service planning, stock control and purchasing., • A professional, customer-focused approach with strong attention to detail and the ability to remain calm under pressure., • Ability to work effectively with the Restaurant Manager, kitchen team, suppliers and other colleagues.
