Job Description General Manager – Restaurant & Bar Tavern on George | New Brunswick, NJ Full-Time | $60,000–$85,000/year + Performance-Based Bonus About Tavern on George Tavern on George is a full-service restaurant, bar, live music venue, and private-event destination located in the heart of New Brunswick, NJ. We are seeking an experienced, hands-on General Manager to take full ownership of the day-to-day operations of the restaurant. This is not simply a shift-management position. We are looking for an owner-minded operator who can lead our team, manage costs, drive revenue, maintain high operational standards, and take accountability for the overall performance of the restaurant. The General Manager will report directly to ownership and serve as the primary operating leader of Tavern on George. Key Responsibilities Restaurant Operations • Oversee all day-to-day restaurant and bar operations., • Ensure the restaurant is properly staffed, prepared, clean, and ready for every service., • Maintain high standards for food, beverage, service, cleanliness, and hospitality., • Maintain a strong management presence during peak business periods., • Oversee opening and closing procedures., • Handle operational and guest-service issues without requiring constant owner involvement., • Coordinate front-of-house, kitchen, bar, private-event, and live-entertainment operations., • Continuously identify opportunities to improve efficiency, revenue, and profitability. Team Leadership • Lead and manage the restaurant team and department leaders., • Recruit, interview, hire, onboard, train, coach, and develop employees., • Create and manage weekly employee schedules., • Manage employee attendance, call-outs, shift changes, and timekeeping., • Conduct performance conversations and disciplinary actions when necessary., • Hold employees accountable to company standards and policies., • Develop supervisors and future managers., • Build a positive culture centered around hospitality, teamwork, professionalism, accountability, and integrity. Labor Management • Build schedules based on projected sales and business needs., • Maintain appropriate staffing levels while controlling labor costs., • Monitor labor throughout the week and make adjustments when necessary., • Control unnecessary overtime., • Review employee timecards for accuracy., • Maintain appropriate management coverage during operating hours. Financial Performance • Take accountability for the financial performance of the restaurant., • Monitor sales, labor, food costs, beverage costs, purchasing, and other operating expenses., • Understand and review restaurant P&L performance., • Manage the restaurant to established financial and operational targets., • Identify opportunities to increase revenue and improve profitability., • Review discounts, comps, voids, refunds, and other adjustments., • Provide ownership with regular updates on restaurant performance., • Assist with budgeting, forecasting, and operational planning. Inventory, Purchasing & Cost Control • Oversee food, liquor, beer, wine, and operating-supply inventory., • Maintain accurate inventory procedures and conduct regular inventory counts., • Monitor food and beverage costs, waste, spoilage, and product usage., • Oversee purchasing and vendor relationships., • Monitor vendor pricing and identify cost-saving opportunities., • Verify deliveries, invoices, quantities, and pricing., • Maintain appropriate inventory levels without excessive overstocking., • Investigate unusual inventory variances or unexplained losses. Loss Prevention • Maintain strong controls to protect restaurant assets., • Monitor and prevent unauthorized purchases, inventory loss, excessive waste, over-pouring, improper discounts, comps, voids, refunds, cash discrepancies, and timekeeping issues., • Ensure company credit cards and purchasing accounts are used only for authorized business expenses., • Immediately report suspected theft, fraud, or significant policy violations to ownership. Guest Experience • Maintain a visible and active presence throughout service., • Build relationships with regular guests and the local community., • Ensure employees consistently provide friendly, attentive, and professional service., • Resolve guest complaints professionally and efficiently., • Monitor guest feedback and online reviews., • Identify recurring issues and implement solutions to improve the guest experience. Bar & Beverage Operations • Work closely with bar leadership to maintain strong beverage operations., • Monitor liquor, beer, and wine inventory and costs., • Ensure proper recipes, portions, and pouring standards., • Monitor beverage waste, comps, discounts, and inventory variances., • Ensure responsible alcohol service and compliance with applicable regulations., • Identify opportunities to improve beverage sales and profitability. Kitchen Coordination • Work closely with the Kitchen Manager on BOH operations., • Hold kitchen leadership accountable for food quality, consistency, cleanliness, and execution., • Monitor ticket times and communication between FOH and BOH., • Review kitchen labor and food costs., • Address recurring food-quality or guest-service issues., • Ensure BOH operations support the overall financial and operational goals of the restaurant. Private Events & Live Entertainment • Oversee the operational execution of private parties, corporate events, birthdays, showers, buyouts, and other group events., • Coordinate event staffing, food, beverage, room setup, and execution., • Ensure private events are executed according to client expectations., • Identify opportunities to increase private-event revenue., • Coordinate restaurant operations around live music and entertainment., • Ensure appropriate staffing and preparation for high-volume entertainment nights. Facility, Safety & Compliance • Ensure the restaurant remains clean, organized, safe, and well-maintained., • Identify maintenance issues and coordinate repairs when necessary., • Maintain compliance with applicable health, safety, food-service, and alcohol-service regulations., • Maintain required certifications and records., • Ensure workplace and guest incidents are properly documented and reported., • Keep the restaurant inspection-ready at all times. What We're Looking For The ideal candidate is a hands-on restaurant operator and strong leader who understands both hospitality and the business side of running a restaurant. Qualifications • 3–5+ years of restaurant management experience., • General Manager, Assistant General Manager, Restaurant Manager, or comparable leadership experience strongly preferred., • Experience in a full-service restaurant and bar environment., • Strong understanding of restaurant P&Ls, labor costs, food costs, beverage costs, inventory, and purchasing., • Proven ability to recruit, train, coach, and hold employees accountable., • Strong scheduling and labor-management skills., • Strong organizational and problem-solving abilities., • Ability to lead both front-of-house operations and work effectively with kitchen leadership., • Comfortable working in a high-volume environment., • Experience with POS, scheduling, payroll, and restaurant management systems., • Private-event and/or live-entertainment experience is a plus., • Strong communication and leadership skills., • Must be available to work nights, weekends, holidays, and peak restaurant periods as required. The General Manager must have schedule flexibility and be available during the restaurant's most important operating periods, including nights, weekends, holidays, private events, and high-volume services.
