The menu centers on open-faced temaki, Japanese snacks, sake, shochu-based drinks, mocktails, tea, and a warm, focused guest experience. This role is not a hidden back-of-house sushi position and it is not formal omakase counter service. It sits in between: clean technique, warm guest interaction, organized station work, and approachable explanations for guests. This is a strong fit for someone with sushi, handroll, raw seafood, Japanese restaurant, counter-service, or guest-facing chef experience who wants to be part of a small opening team.
