Role Overview: This is a great time to join our team as a Sous Chef you will assist in spearheading the culinary experience and assist in driving our approach in delivering a high-quality food offering. As a Sous Chef, you will ensure the smooth running of the Hotel Kitchen teams you are assigned and assume full accountability in the absence of the Head Chef, acting in their capacity, and as directed by Management. Main Responsibilities • Assist in the Management of all food and sundry costs through rigorous stock control measures, • Analyse, and present monthly profit and loss commentaries with follow on corrective activity as directed by the Head Chef, • Assist with Daily / weekly payroll and food cost analysis in accordance with forecasted and materialised revenue levels to ensure optimal performance with overspend corrected within the same trading period and as directed by the Head Chef, • To consistently conduct time in motion studies across all kitchen functions in accordance with technology and process adoption identifying incremental efficiencies without impact to the culinary brand proposition, and as directed by the Head Chef, • Assist the Head Chef work with the Food and Beverage Manager to translate annual strategic business plans into considered departmental scorecard targets and associated activity plans, • Assist the Head Chef in developing a multi skilled culinary team that delivers payroll flexibility., • To be highly visible at key service periods focusing attention to detail on culinary delivery, • Maintain team focus on 'the Customer's need' with service personalisation About you: We love to welcome people with different experiences and from different places into our Apex family. Core to your role will be our Computerised Maintenance Management System (CMMS) through which you will receive and perform a wide range of practical tasks and activities in a timely and work safe manner, to include; • Painting – Surfaces preparation, application of paint to walls and woodwork, • Bathroom Maintenance- Tile replacement, replacement of grouting & sealant, repair of fixtures and fittings,, • Plumbing- Minor pipework repairs, replacement of taps/ fittings/ sanitaryware, unblocking of wastes, servicing of TMVs, • Air conditioning – Basic refrigeration maintenance, cleaning of air filters/ coils/ strainers, • Electrical – Minor electrical works such as replacing damaged sockets/ switches, lamp replacement, light fitting replacement, resetting of trippages, repair of small appliances, periodic safety checks, • Carpentry/ joinery- adjustment of doors, adjustment/ replacement of door closures, minor furniture repairs, replacement of smoke seals, lock replacements, • Plant Maintenance – Replacing AHU filters, cleaning of strainers, intake/ extracts, swimming pool maintenance, valve exercising, perform operational checks to plant, • Periodic Safety Checks- the inspection and testing of fire doors, fire alarms, sprinkler systems, emergency lighting, fire safety interfaces, fire extinguishers, smoke vents, the undertaking of legionella control measures, • Security – Door lock programming and battery replacement, bedroom safe openings, • General – Carpet repairs, ceiling tile replacement, responding to guest requests for assistance and service recovery We love to welcome people with different experiences and skillsets into our maintenance team and wider Apex family.
