Kitchen Operations • Maintain a clean, organized, and efficient workstation throughout every shift., • Properly store, rotate, label, and date all products using FIFO procedures., • Assist with receiving deliveries and organizing inventory., • Help maintain prep lists and communicate inventory needs to kitchen leadership., • Support opening and closing duties, including cleaning equipment and maintaining kitchen organization. Food Safety & Sanitation • Maintain compliance with all Department of Health regulations and food safety standards., • Follow proper food handling, storage, and allergen protocols., • Ensure kitchen equipment and work areas remain clean and sanitized at all times., • Practice safe knife handling and proper equipment operation. Teamwork • Work collaboratively with chefs, cooks, and front-of-house staff to ensure timely and accurate service., • Communicate clearly during service and assist teammates whenever needed., • Maintain a positive attitude during busy shifts and contribute to a respectful, professional kitchen culture., • Be open to coaching and continuous learning. Qualifications • 3–5 years of line cook experience in a high-volume restaurant preferred., • Experience working multiple stations is a plus., • Strong work ethic and attention to detail., • Ability to multitask and remain organized in a fast-paced environment., • Understanding of food safety and sanitation practices., • Flexible availability, including nights, weekends, and holidays., • Ability to stand for extended periods and lift up to 50 pounds. The concept is connected to an existing Japanese restaurant space, so the standards are polished, but the team is small and hands-on. This role is best for a cook with experience in Japanese cuisine, seafood, rice, small plates, opening restaurants, or small teams. The kitchen is compact, so candidates should be organized, independent, clean, and comfortable helping across more than one station.
